Broccoli Stir Fry With Rotisserie Chicken

The sauce in this stir fry is perfectly saucy and delicious thanks to the addition of Grill Party BBQ® Rotisserie Chicken Seasoning, making it ideal for serving over hot, fluffy white rice.

STEP TWO: MAKE THE SAUCE!
- In a small mixing bowl, combine the sauce ingredients and stir to dissolve the sugar and cornstarch (warm broth will help dissolve the sugar faster).
- Set aside the sauce.
STEP THREE: COOK YO’ CHICKEN
- Cut chicken into small bite-sized pieces (no thicker than 3/4″)
- Now season chicken lightly with Grill Party BBQ® Rotisserie Chicken Seasoning
- Warm a large heavy skillet or wok over medium-high heat.
- Add 1 tbsp sesame oil.
- Allow the chicken to sear for 1 minute in a single layer, then stir fry for another 5 minutes, or until golden brown and cooked through.
- Then transfer the chicken to a bowl and cover loosely to keep warm.
STEP FOUR: SAUTE VEGGIES!
- Add one more tbsp of sesame oil to the same skillet, along with the broccoli florets, sliced onion, and sliced mushrooms.
- Reduce heat to medium/low after 3 minutes, or until mushrooms are softened and broccoli is crisp-tender.
STEP FIVE: STIR FRY SAUCE
- Now give the sauce a quick stir to remove any settling starch before pouring it over the fried veggies.
- Simmer for 3-4 minutes, or until the sauce has thickened and the flavors of the garlic and ginger have mellowed.
- To thin the sauce, add 1 tbsp of water at a time.
STEP SIX: SERVE IT UP
- Return the chicken to the pan and stir for 30 seconds until heated.
- Serve with hot rice and additional soy sauce to taste.
INGREDIENTS
ROTISSERIE CHICKEN AND BROCCOLI:
- 1 pound boneless chicken breast, cut into 3/4″ sized pieces
- 2 tbsp extra-light cooking olive oil
- 1 pound broccoli florets (about 5 cups)
- 1 small, thinly sliced yellow onion
- Thickly sliced, 1/2 pound white button mushrooms
STIR FRY SAUCE:
- 1/3 cup of low-sodium chicken broth
- 3 tbsp low-sodium soy sauce, or more to taste (if gluten-free, use Tamari).
- 2 tbsp of brown sugar (or honey to taste)
- 1 tbsp cornstarch
- 1 tbsp sesame oil
- 1 tsp freshly peeled and grated ginger (lightly packed)
- 2 grated tiny garlic cloves
- 1/4 tsp Grill Party BBQ® Rotisserie Chicken Seasoning
SUPPLIES
