Chili With Spicy Beef Chorizo

This recipe calls for beef chorizo, stew meat, and ground beef. Ground beef seasoned with Grill Party BBQ® Chorizo Chili Seasoning makes a more meaty and flavorful chili.

STEP TWO: COOKIN’ THE MEAT
- Heat the Dutch oven to medium-high.
- Preheat the pellet smoker to 300°F.
- Allow the chorizo, ground beef, and stew meat to come to room temperature…
STEP THREE: CHILI TIME
- Dice Grill Party BBQ® Chorizo Chili Seasoning, onion, and jalapeno (seeded or unseeded, depending on how spicy you want it) into large chunks.
- After dicing the vegetables, cut the stew meat into 0.5 x 0.5-inch cubes.
- Add butter to the Dutch oven once it is hot. The butter should quickly sizzle and melt (if using cast iron, the cast iron should be smoking).
- Add your stew meat to sear it now. 1 minute on each side
- Reduce the heat to medium-low and stir in the chorizo chili ground beef…
- Combine the ground meat.
- Allow all meat to finish cooking in the fat (DO NOT DRAIN!).
- Remove the ground beef and stew meat once it has been browned.
- Keep the fat in the pan!
STEP FOUR: FINAL STEP
- Now to the fat, add your peppers, onion, and garlic.
- Mix your veggies in the residual fat from the meat.
- Allow cooling for 5 to 6 minutes. While the vegetables are cooking, remove the lids from the cans as needed.
- Combine the Chorizo seasoning with the veggies.
- Now stir in the broth, beer, beans, and meat.
- Move to your smoker (uncovered). Cook for 30 minutes to 1.5 hours on the smoker.
STEP FIVE: SERVE IT UP
- Serve chili immediately, garnished with avocado, cilantro, sour cream, and tortilla chips.

- 1 pound stew meat
- 1 onion, white
- 2 garlic cloves
- 3 jalapenos
- 1 beer (something with good flavor)
- 1 – 32 oz container of beef broth
- 2 – 16 oz cans of pinto beans
- 1 – 6 oz can of tomato paste
- 1 – 32 oz can regular diced tomatoes
- 1 cilantro bunch
- 1 avocado
- Sour cream
- Tortilla chips
