Mexican Chorizo, Beef, and Black Bean Chili

This chili recipe with chorizo, stew beef, and black beans is a hearty dish that’s certain to please the meat lovers at your table.

STEP TWO: COOKIN’ THE MEAT
- In the large skillet over medium-high heat saute the chorizo for approx 3 minutes or until browned. Remove Chorizo and add onion and garlic to pan in a saute for 3 minutes.
- Heat a dutch oven over medium-high heat and saute Beef for 5 minutes or until browned.
STEP THREE: CHILI TIME
- Put all ingredients into the dutch oven in the following order: beef, chopped chilis, chorizo, tomato paste, seasonings, and tomato paste. Stir constantly and cook for 2 minutes.
- Stir in red wine, lime juice, beef broth, and tomatoes.
- Reduce heat and simmer for 90 minutes, stirring occasionally.
STEP FOUR: FINAL STEP
- Stir in the cornflour, pinto beans, and black beans.
- Bring everything to a boil, reduce the heat and let simmer for 30 minutes.
- The secret to success when cooking this chili is to not over stir, try waiting 5-10 minutes in between stirring.
STEP FIVE: SERVE IT UP
- Serve in a cast-iron bowl with tortillas.

- 4 links Spanish Chorizo Sausage (thinly sliced)
- 1 pound Beef Stew Meat
- 1.5 cups Chopped Onion
- 4 cloves Minced Garlic
- 1 can Chipotle Chiles in Adobo Sauce
- 3 tablespoons Tomato Paste
- 1/4 cup Chorizo Chili Seasoning
- 1 cup Dry Red Wine
- 1/4 cup Fresh Lime Juice
- 14 ounces Low Sodium Beef Broth
- 28 ounces Chopped Tomatoes
- 15 ounces Pinto Beans
- 15 ounces Black Beans
- 2 tablespoons Corn Flour
