Vegan Fajitas in a Cast Iron Skillet

Vegan fajita filling in a Cast Iron Skillet with charred bell peppers, red onion, and portobello mushrooms mixed with Grill Party BBQ® Fajita Fiesta seasoning is definitely going to have people asking for “more please!”

STEP TWO: COOK THE VEGGIES IN ORDER
- In a hot cast-iron skillet add 1 tablespoon of oil and the sliced red onions. Cook for 3 minutes.
- Add half of the seasoning and all of the sliced bell peppers and cook until tender and charred.
- Remove from the pan.
STEP THREE: HERE COME THE SHROOMS
- Add another tablespoon of oil and the prepared mushrooms. Sprinkle half of the remaining seasoning and cook until the first side is charred and the mushroom is beginning to get tender.
- Flip and repeat.
- Add the peppers and onions back to the pan and cook for a few more minutes.
- The secret to getting a good char on veggies is to make sure to not stir too frequently.
STEP FIVE: SERVE IT UP
- Serve sizzling hot with sides such as tortillas, sour cream, salsa, and guacamole.

- 2 large portobello mushrooms, gills removed and sliced on the bias
- 1 green bell pepper sliced
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 red onion cut half and into slices
- Oil for cooking
- Tortillas, sour cream, salsa, guacamole for serving.
